I recently shared on social media that our favorite meal for a meatless or low-meat meal is what my children adorably call “Hot Rice“, and I had several friends ask for the recipe. Since I love my friends and always want to help out with meal prep, I wanted to share it with you!
In my kitchen, I like to keep things simple. Every now and then I will bust out a fancy recipe, but for the most part I cook very simple meals with few dishes because I detest washing them. This is a one-pot meal – I prepare it all in one go! Now, if you’re using a ground sausage, you’ll want to brown it first so that would be a second pan, but if you’re going meatless or smoked sausage you can still get away with using only 1 pan.
While that pile of spices looks great, it doesn’t exactly show you the awesome that IS hot rice. Now the name hot rice is really not what the recipe is called. As I’m sure happens in your house too, my kids like to change the name of their meals to fit what they think about it, especially if it’s a long name or something they can’t pronounce. This is basically a recipe for Jambalaya that I have tweaked over time to make my own. Bear in mind though – I’m not from, nor have I ever visited, Louisiana. I certainly do not profess to be an expert at Cajun or Creole cuisine. If you’re a fan of traditional jambalaya, just keep in mind that this recipe is called Hot Rice…
